Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the moose meat and brown on all sides.
3. Add the chopped onion and minced garlic, cook until softened.
4. Pour in the beef broth and diced tomatoes. Bring to a boil.
5. Add the carrots, potatoes, thyme, salt, and pepper. Reduce heat and simmer for 2 hours.
6. Serve hot and enjoy!
