Ingredients:  

Main Ingredients

  • 2 cups chicken broth
  • 1 lb chicken breast boneless, skinless
  • 1 lb pork shoulder cubed
  • 2 cups corn kernels fresh or frozen
  • 2 cups lima beans fresh or frozen
  • 1 cup diced tomatoes canned
  • 1 cup potatoes diced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika

Instructions: 

  • 1. In a large pot, combine chicken broth, chicken breast, and pork shoulder. Bring to a boil, then reduce heat and simmer until meats are tender, about 1 hour.
  • 2. Remove meats from pot, shred chicken and pork, and return to pot.
  • 3. Add corn, lima beans, tomatoes, potatoes, onion, garlic, salt, pepper, and paprika. Simmer until vegetables are tender, about 1 hour.
  • 4. Adjust seasoning to taste and serve hot.

Notes:

This stew is even better the next day after the flavors have melded together.
