Ingredients:  

Main Ingredients

  • 1 lb Beef stew meat cut into chunks
  • 2 cups Carrots peeled and chopped
  • 2 cups Potatoes peeled and chopped
  • 1 cup Green beans trimmed and cut
  • 4 cups Low FODMAP beef broth
  • 1 tbsp Olive oil
  • 1 tsp Salt to taste
  • 1 tsp Pepper to taste
  • 1 tsp Dried thyme

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add beef and cook until browned on all sides.
  • Add carrots, potatoes, and green beans to the pot.
  • Pour in the beef broth and bring to a boil.
  • Reduce heat to low, cover, and simmer for 2 hours or until the meat is tender.
  • Season with salt, pepper, and thyme. Serve hot.

This stew is perfect for a cozy dinner and is gentle on the stomach.
