Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the chicken pieces and cook until browned.
3. Add the carrots, celery, onion, and garlic. Cook until the vegetables are tender.
4. Pour in the chicken broth and add the salt, pepper, thyme, and rosemary.
5. Bring to a boil, then reduce the heat and let it simmer for about 30 minutes.
6. Adjust seasoning if needed and serve hot.
Notes:
Feel free to add other low-carb vegetables like zucchini or bell peppers.
