Ingredients:  

Main Ingredients

  • 1 lb Chicken Breast cut into bite-sized pieces
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Chicken Broth
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the chicken pieces and cook until browned.
  • 3. Add the carrots, celery, onion, and garlic. Cook until the vegetables are tender.
  • 4. Pour in the chicken broth and add the salt, pepper, thyme, and rosemary.
  • 5. Bring to a boil, then reduce the heat and let it simmer for about 30 minutes.
  • 6. Adjust seasoning if needed and serve hot.

Notes:

Feel free to add other low-carb vegetables like zucchini or bell peppers.
