Ingredients:  

Main Ingredients

  • 1 lb Ground Beef
  • 1 can Black Beans drained and rinsed
  • 1 can Corn drained
  • 1 can Diced Tomatoes
  • 1 packet Taco Seasoning
  • 2 cups Beef Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced

Instructions: 

  • 1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is soft.
  • 3. Stir in the taco seasoning, beef broth, black beans, corn, and diced tomatoes. Bring to a boil.
  • 4. Reduce heat and let simmer for 20 minutes, stirring occasionally.
  • 5. Serve hot, garnished with your favorite taco toppings like shredded cheese, sour cream, and chopped cilantro.

Notes:

This stew is perfect for a cozy night in. Feel free to add more veggies or adjust the seasoning to your taste.
