Ingredients:  

Main Ingredients

  • 2 lbs Fish (tilapia or any firm white fish) cut into chunks
  • 1 cup Vegetable oil
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Ginger grated
  • 3 cups Tomatoes blended
  • 2 tbsp Tomato paste
  • 2 cups Fish stock or water
  • 1 tsp Thyme dried
  • 1 tsp Curry powder
  • 2 pcs Bay leaves
  • to taste Salt
  • to taste Black pepper

Instructions: 

  • 1. Heat the vegetable oil in a large pot over medium heat.
  • 2. Add the chopped onions and sauté until translucent.
  • 3. Stir in the minced garlic and grated ginger, cook for another minute.
  • 4. Add the blended tomatoes and tomato paste, cook for about 10 minutes, stirring occasionally.
  • 5. Pour in the fish stock or water, then add thyme, curry powder, bay leaves, salt, and black pepper. Stir well.
  • 6. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
  • 7. Gently add the fish chunks into the pot. Simmer for another 10-15 minutes until the fish is cooked through.
  • 8. Adjust seasoning if necessary. Serve hot with rice or bread.

Notes:

This stew is best enjoyed fresh but can be refrigerated for up to 3 days.
