Fish (tilapia or any firm white fish)

Vegetable oil

grated

Tomatoes

Fish stock or water

Black pepper
Instructions:
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onions and sauté until translucent.
3. Stir in the minced garlic and grated ginger, cook for another minute.
4. Add the blended tomatoes and tomato paste, cook for about 10 minutes, stirring occasionally.
5. Pour in the fish stock or water, then add thyme, curry powder, bay leaves, salt, and black pepper. Stir well.
6. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
7. Gently add the fish chunks into the pot. Simmer for another 10-15 minutes until the fish is cooked through.
8. Adjust seasoning if necessary. Serve hot with rice or bread.
Notes:
This stew is best enjoyed fresh but can be refrigerated for up to 3 days.
