Ingredients:  

Main Ingredients

  • 1 lb Chicken Breast cut into cubes
  • 1 can Cannellini Beans drained and rinsed
  • 1 can Diced Tomatoes
  • 1 cup Chicken Broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • 1 tbsp Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic. Sauté until softened.
  • Add cubed chicken breast. Cook until browned.
  • Stir in cannellini beans, diced tomatoes, chicken broth, dried oregano, and dried basil.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Season with salt and black pepper to taste. Serve hot.

Notes:

Feel free to add other vegetables like carrots or celery for extra flavor.
