Ingredients:  

Main Ingredients

  • 2 lbs beef stew meat
  • 1 large onion chopped
  • 1 large green bell pepper chopped
  • 3 cloves garlic minced
  • 1 cup tomato sauce
  • 2 cups beef broth
  • 1 tsp cumin
  • 1 tsp oregano
  • 2 pcs bay leaves
  • 2 cups potatoes peeled and diced
  • 1 cup carrots sliced
  • to taste salt and pepper

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the beef and brown on all sides.
  • 2. Add the chopped onion, green bell pepper, and minced garlic. Cook until the vegetables are soft.
  • 3. Stir in the tomato sauce, beef broth, cumin, oregano, and bay leaves. Bring to a boil.
  • 4. Reduce the heat to low, cover, and simmer for about 1 hour.
  • 5. Add the potatoes and carrots. Continue to simmer for another 30-40 minutes, or until the vegetables are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Serve with rice or crusty bread.
