Instructions:
1. Heat a large pot over medium heat and brown the beef stew meat.
2. Add the chopped onion and minced garlic, cook until softened.
3. Stir in the beef broth, dried thyme, salt, and black pepper.
4. Add the cubed butternut squash and bring to a boil.
5. Reduce heat to low, cover, and simmer for about 45-60 minutes or until the beef and squash are tender.
