Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into cubes
  • 2 cups Mushrooms sliced
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried
  • to taste Salt
  • to taste Black Pepper
  • 2 tbsp Olive Oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium-high heat.
  • 2. Add beef and cook until browned on all sides. Remove and set aside.
  • 3. In the same pot, add onions, garlic, carrots, and celery. Cook until softened.
  • 4. Stir in mushrooms and cook for another 5 minutes.
  • 5. Add tomato paste, thyme, and rosemary. Cook for 2 minutes.
  • 6. Return beef to the pot. Pour in beef broth and bring to a boil.
  • 7. Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.
  • 8. Season with salt and black pepper to taste. Serve hot.

Notes:

Great with crusty bread or over mashed potatoes.
