Olive Oil
Instructions:
1. Heat olive oil in a large pot over medium-high heat.
2. Add beef and cook until browned on all sides. Remove and set aside.
3. In the same pot, add onions, garlic, carrots, and celery. Cook until softened.
4. Stir in mushrooms and cook for another 5 minutes.
5. Add tomato paste, thyme, and rosemary. Cook for 2 minutes.
6. Return beef to the pot. Pour in beef broth and bring to a boil.
7. Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.
8. Season with salt and black pepper to taste. Serve hot.
Notes:
Great with crusty bread or over mashed potatoes.
