Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef and cook until browned on all sides.
3. Add onions and garlic, cook until softened.
4. Pour in beef broth, add carrots, celery, salt, and pepper.
5. Bring to a boil, then reduce heat and let simmer for 2 hours.
6. Serve hot.
Notes:
Feel free to add other veggies like potatoes or peas if you're not strictly paleo.
