Ingredients:  

Main Ingredients

  • 1 lb Beef stew meat cut into cubes
  • 2 cups Pumpkin peeled and cubed
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef broth
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add beef and cook until browned on all sides.
  • 3. Add onions and garlic, cook until softened.
  • 4. Pour in beef broth, add salt, pepper, thyme, and rosemary. Bring to a boil.
  • 5. Reduce heat, cover, and simmer for 1 hour.
  • 6. Add pumpkin, carrots, and celery. Simmer for another hour until vegetables are tender.
  • 7. Adjust seasoning if needed and serve hot.

Notes:

For a thicker stew, you can mash some of the pumpkin pieces.
