Ingredients:  

Main Ingredients

  • 2 cups Corn kernels fresh or frozen
  • 2 cups Beans cooked, any variety
  • 2 cups Squash diced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 1 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  • 3. Add the diced squash and cook for another 5 minutes.
  • 4. Stir in the corn, beans, and vegetable broth. Bring to a boil.
  • 5. Reduce the heat and let it simmer for about 30 minutes, or until the squash is tender.
  • 6. Season with salt and black pepper to taste. Serve hot.

Notes:

This stew is a great way to enjoy the bounty of the harvest. Feel free to add other vegetables or spices to suit your taste.
