Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 2 cups vegetable broth
  • 1 cup peas
  • 1 tsp thyme
  • 1 tsp rosemary
  • to taste salt and pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the sliced carrots and diced potatoes, and cook for 5 minutes, stirring occasionally.
  • Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 30 minutes, or until the vegetables are tender.
  • Add the peas, thyme, rosemary, salt, and pepper. Cook for another 5 minutes.
  • Serve hot and enjoy!

Notes:

Feel free to add other vegetables like mushrooms or parsnips for more variety.
