large onion, chopped

garlic, minced

carrots, sliced

potatoes, diced

vegetable broth

peas

thyme

rosemary
to taste
salt and pepper
Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the sliced carrots and diced potatoes, and cook for 5 minutes, stirring occasionally.
Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for 30 minutes, or until the vegetables are tender.
Add the peas, thyme, rosemary, salt, and pepper. Cook for another 5 minutes.
Serve hot and enjoy!
Notes:
Feel free to add other vegetables like mushrooms or parsnips for more variety.
