Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the chopped onion, bell pepper, and garlic. Cook until softened.
3. Add the chicken thighs and cook until browned on all sides.
4. Stir in the Cajun seasoning, chicken broth, and diced tomatoes. Bring to a boil.
5. Reduce heat and let simmer for about 30 minutes.
6. Add the sliced okra and cook for another 10 minutes.
7. Serve hot over cooked rice.
