Ingredients:  

Main Ingredients

  • 1 lb Chicken Thighs boneless, skinless
  • 1 cup Onion chopped
  • 1 cup Bell Pepper chopped
  • 2 cloves Garlic minced
  • 2 tbsp Cajun Seasoning
  • 4 cups Chicken Broth
  • 2 cups Diced Tomatoes canned
  • 1 cup Okra sliced
  • 1 cup Rice cooked

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the chopped onion, bell pepper, and garlic. Cook until softened.
  • 3. Add the chicken thighs and cook until browned on all sides.
  • 4. Stir in the Cajun seasoning, chicken broth, and diced tomatoes. Bring to a boil.
  • 5. Reduce heat and let simmer for about 30 minutes.
  • 6. Add the sliced okra and cook for another 10 minutes.
  • 7. Serve hot over cooked rice.
