Pork shoulder
cut into cubes

Corn kernels
fresh or frozen

Salt and pepper
Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the pork cubes and brown on all sides. Remove and set aside.
3. In the same pot, add the chopped onion and cook until soft.
4. Add the minced garlic and cook for another minute.
5. Return the pork to the pot and add the diced tomatoes, chicken broth, cumin, oregano, and chili powder.
6. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the pork is tender.
7. Add the corn and black beans and cook for another 10 minutes.
8. Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add some chopped cilantro and a squeeze of lime for extra flavor.
