Ingredients:  

Main Ingredients

  • 1 lb Pork shoulder cut into cubes
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 can Diced tomatoes 14.5 oz
  • 2 cups Chicken broth
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Chili powder
  • 1 cup Corn kernels fresh or frozen
  • 1 cup Black beans cooked
  • to taste Salt and pepper

Instructions: 

  • 1. Heat a large pot over medium heat and add a bit of oil.
  • 2. Add the pork cubes and brown on all sides. Remove and set aside.
  • 3. In the same pot, add the chopped onion and cook until soft.
  • 4. Add the minced garlic and cook for another minute.
  • 5. Return the pork to the pot and add the diced tomatoes, chicken broth, cumin, oregano, and chili powder.
  • 6. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the pork is tender.
  • 7. Add the corn and black beans and cook for another 10 minutes.
  • 8. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add some chopped cilantro and a squeeze of lime for extra flavor.
