Instructions:
1. Heat a large pot over medium heat.
2. Add the garlic and sauté until fragrant.
3. Add the pumpkin, carrots, okra, red peppers, and green beans. Stir well.
4. Pour in the coconut milk and add thyme, salt, and black pepper. Stir to combine.
5. Bring to a boil, then reduce heat and let simmer for 30-40 minutes, or until vegetables are tender.
6. Serve hot and enjoy!
