Ingredients:  

Main Ingredients

  • 2 cups Pumpkin, diced
  • 1 cup Carrots, sliced
  • 1 cup Okra, chopped
  • 1 cup Coconut Milk
  • 1 cup Red Peppers, chopped
  • 1 cup Green Beans, chopped
  • 2 cloves Garlic, minced
  • 1 tbsp Thyme
  • 1 tsp Salt
  • 1 tsp Black Pepper

Instructions: 

  • 1. Heat a large pot over medium heat.
  • 2. Add the garlic and sauté until fragrant.
  • 3. Add the pumpkin, carrots, okra, red peppers, and green beans. Stir well.
  • 4. Pour in the coconut milk and add thyme, salt, and black pepper. Stir to combine.
  • 5. Bring to a boil, then reduce heat and let simmer for 30-40 minutes, or until vegetables are tender.
  • 6. Serve hot and enjoy!
