Ingredients:  

Main Ingredients

  • 1 lb White fish fillets cut into chunks
  • 1 cup Coconut milk
  • 2 medium Tomatoes chopped
  • 1 medium Onion chopped
  • 1 medium Bell pepper chopped
  • 2 cloves Garlic minced
  • 2 tbsp Olive oil
  • 1 cup Fish stock
  • to taste Salt
  • to taste Black pepper
  • 1 bunch Cilantro chopped

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion, bell pepper, and garlic. Cook until softened.
  • 3. Add the tomatoes and cook for another 5 minutes.
  • 4. Pour in the coconut milk and fish stock. Bring to a simmer.
  • 5. Add the fish chunks and cook until the fish is cooked through, about 10 minutes.
  • 6. Season with salt and black pepper to taste.
  • 7. Garnish with chopped cilantro before serving.

Notes:

Serve with rice for a complete meal.
