Ingredients:

vegetable broth

white beans, drained and rinsed

dried thyme

dried rosemary

kale, chopped
Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Stir in the minced garlic, chopped carrots, and celery. Cook for another 5 minutes.
Pour in the vegetable broth and bring to a boil.
Add the white beans, dried thyme, and dried rosemary. Reduce heat and simmer for 30 minutes.
Season with salt and black pepper to taste.
Stir in the chopped kale and cook for another 5 minutes, until wilted.
Serve hot and enjoy!
Notes:
This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
