Ingredients:  

Main Ingredients

  • 2 lbs Beef Stew Meat cut into chunks
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Beef Broth
  • 1 can Diced Tomatoes 14.5 oz can
  • 2 tsp Ground Cumin
  • 1 tsp Chili Powder
  • 2 cups Potatoes peeled and diced
  • 1 cup Carrots sliced
  • 1 cup Corn Kernels
  • to taste Salt and Pepper

Instructions: 

  • 1. In a large pot, heat some oil over medium heat. Add the beef and cook until browned on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Pour in the beef broth and diced tomatoes. Stir in the cumin and chili powder. Bring to a boil.
  • 4. Reduce the heat to low and let it simmer for about 1 hour.
  • 5. Add the diced potatoes, sliced carrots, and corn kernels. Continue to simmer for another 30-40 minutes, or until the vegetables are tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is even better the next day. Store leftovers in the fridge and reheat before serving.
