Ingredients:  

Main Ingredients

  • 1 lb Pork shoulder, cubed
  • 2 cups Green chilies, roasted and chopped
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Chicken broth
  • 1 tsp Cumin
  • 1 tsp Oregano
  • to taste Salt and pepper

Instructions: 

  • 1. In a large pot, brown the cubed pork shoulder over medium heat.
  • 2. Add the chopped onion and minced garlic, and cook until softened.
  • 3. Stir in the roasted green chilies, cumin, and oregano.
  • 4. Pour in the chicken broth and bring to a boil.
  • 5. Reduce heat and simmer for about 45 minutes, or until the pork is tender.
  • 6. Season with salt and pepper to taste.

Notes:

This stew is great served with warm tortillas or over rice.
