oxtail
cut into pieces

tbsp
olive oil

large onion
chopped

carrots
chopped

cloves
garlic
minced

beef broth
1
cup
red wine
2
tbsp
tomato paste
2
sprigs
thyme
to taste
salt and pepper
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Brown the oxtail pieces on all sides. Remove and set aside.
3. In the same pot, add onions, carrots, and garlic. Cook until softened.
4. Stir in tomato paste and cook for another minute.
5. Return oxtail to the pot. Add beef broth, red wine, thyme, bay leaves, salt, and pepper.
6. Bring to a boil, then reduce heat to low. Cover and simmer for about 3 hours or until oxtail is tender.
7. Remove thyme sprigs and bay leaves before serving.
Notes:
Serve with rice or mashed potatoes for a complete meal.
