Ingredients:  

Main Ingredients

  • 2 lbs oxtail cut into pieces
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 2 carrots chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 2 sprigs thyme
  • to taste salt and pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Brown the oxtail pieces on all sides. Remove and set aside.
  • 3. In the same pot, add onions, carrots, and garlic. Cook until softened.
  • 4. Stir in tomato paste and cook for another minute.
  • 5. Return oxtail to the pot. Add beef broth, red wine, thyme, bay leaves, salt, and pepper.
  • 6. Bring to a boil, then reduce heat to low. Cover and simmer for about 3 hours or until oxtail is tender.
  • 7. Remove thyme sprigs and bay leaves before serving.

Notes:

Serve with rice or mashed potatoes for a complete meal.
