Instructions:
1. In a large pot, heat a bit of oil over medium heat. Add the beef and brown on all sides.
2. Add the onions and garlic, cooking until softened.
3. Stir in the tomato paste, salt, pepper, thyme, and rosemary.
4. Pour in the beef broth, bring to a boil, then reduce heat and simmer for 1.5 hours.
5. Add the carrots and potatoes, simmer for another 30 minutes or until vegetables are tender.
Notes:
Feel free to add other vegetables like peas or green beans.
