Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 1 cup Onions chopped
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried

Instructions: 

  • 1. In a large pot, heat a bit of oil over medium heat. Add the beef and brown on all sides.
  • 2. Add the onions and garlic, cooking until softened.
  • 3. Stir in the tomato paste, salt, pepper, thyme, and rosemary.
  • 4. Pour in the beef broth, bring to a boil, then reduce heat and simmer for 1.5 hours.
  • 5. Add the carrots and potatoes, simmer for another 30 minutes or until vegetables are tender.

Notes:

Feel free to add other vegetables like peas or green beans.
