Ingredients:  

Main Ingredients

  • 2 cups Pumpkin puree
  • 1 cup Diced tomatoes
  • 1 cup Chopped carrots
  • 1 cup Chopped potatoes
  • 1 cup Chopped onions
  • 2 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 1 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the onions and garlic, sauté until fragrant.
  • 3. Add the carrots and potatoes, cook for about 5 minutes.
  • 4. Stir in the pumpkin puree, diced tomatoes, and vegetable broth.
  • 5. Add the cumin, coriander, salt, and pepper. Bring to a boil.
  • 6. Reduce heat and let it simmer for about 20 minutes, until vegetables are tender.
  • 7. Serve hot and enjoy!

Notes:

This stew is perfect for a cozy night in. You can also add other vegetables like bell peppers or zucchini.
