barley

ground beef

onion, chopped

garlic, minced

beef broth

Instructions:
1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Stir in the beef broth, diced tomatoes, carrots, celery, barley, thyme, and basil.
4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 40 minutes, or until the barley and vegetables are tender.
5. Season with salt and pepper to taste. Serve hot.
Notes:
This stew is perfect for a cold day. Feel free to add other vegetables you have on hand.
