Ingredients:  

Main Ingredients

  • 1 cup barley
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups diced tomatoes
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • to taste salt and pepper

Instructions: 

  • 1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the beef broth, diced tomatoes, carrots, celery, barley, thyme, and basil.
  • 4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 40 minutes, or until the barley and vegetables are tender.
  • 5. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is perfect for a cold day. Feel free to add other vegetables you have on hand.
