Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the beef stew meat and cook until browned on all sides.
3. Add the chopped onion and garlic, cooking until softened.
4. Stir in the tomato paste, salt, pepper, and thyme.
5. Add the beef broth, carrots, and potatoes. Bring to a boil.
6. Reduce heat to low, cover, and simmer for about 1 hour or until the meat and vegetables are tender.
7. Adjust seasoning if needed and serve hot.
Notes:
This stew can be stored in the fridge for up to 4 days or frozen for up to 3 months.
