Ingredients:  

Main Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can chickpeas, drained and rinsed (400g)
  • 1 bunch cavolo nero, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes (400g)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion, garlic, carrot, and celery. Cook until softened, about 5-7 minutes.
  • Add the chickpeas, cavolo nero, vegetable broth, diced tomatoes, thyme, and rosemary. Stir to combine.
  • Bring to a boil, then reduce the heat and let it simmer for about 30 minutes.
  • Season with salt and pepper to taste. Serve hot.
