Ingredients:  

Main Ingredients

  • 2 tbsp Olive oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 lb Pork shoulder, cubed
  • 2 cans Hominy, drained and rinsed
  • 4 cups Chicken broth
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Diced tomatoes
  • 1 cup Chopped cilantro for garnish

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Add the cubed pork shoulder and cook until browned on all sides.
  • Stir in the hominy, chicken broth, cumin, oregano, salt, and black pepper.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Add the diced tomatoes and simmer for another 10 minutes.
  • Serve hot, garnished with chopped cilantro.

Notes:

This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
