Pork shoulder, cubed

Hominy, drained and rinsed

Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Add the cubed pork shoulder and cook until browned on all sides.
Stir in the hominy, chicken broth, cumin, oregano, salt, and black pepper.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Add the diced tomatoes and simmer for another 10 minutes.
Serve hot, garnished with chopped cilantro.
Notes:
This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
