Instructions:
1. In a large pot, combine the chicken broth, carrots, celery, and potatoes. Bring to a boil.
2. Reduce heat and simmer until vegetables are tender, about 15 minutes.
3. Add the leftover chicken, salt, pepper, and thyme. Simmer for another 10 minutes.
4. Serve hot and enjoy!
