Instructions:
Heat olive oil in a large pot over medium heat.
Add beef and brown on all sides.
Add onion and garlic, cook until softened.
Stir in beef broth, diced tomatoes, carrots, potatoes, salt, pepper, and paprika.
Bring to a boil, then reduce heat and simmer for 1 hour.
Add okra and cook for an additional 30 minutes.
Notes:
For a thicker stew, you can add a slurry of cornstarch and water in the last 10 minutes of cooking.
