Ingredients:  

Main Ingredients

  • 1 lb beef stew meat
  • 1 cup okra, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can diced tomatoes
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add beef and brown on all sides.
  • Add onion and garlic, cook until softened.
  • Stir in beef broth, diced tomatoes, carrots, potatoes, salt, pepper, and paprika.
  • Bring to a boil, then reduce heat and simmer for 1 hour.
  • Add okra and cook for an additional 30 minutes.

Notes:

For a thicker stew, you can add a slurry of cornstarch and water in the last 10 minutes of cooking.
