Lamb shoulder, cut into chunks

Carrots, peeled and chopped

Potatoes, peeled and chopped

Large onion, chopped

Beef broth

Tomato paste

Black pepper

Olive oil
Instructions:
1. Heat the olive oil in a Dutch oven over medium-high heat.
2. Add the lamb chunks and brown on all sides.
3. Remove the lamb and set aside.
4. Add the onion to the Dutch oven and cook until softened.
5. Stir in the tomato paste and cook for another minute.
6. Return the lamb to the pot and add the carrots, potatoes, beef broth, salt, and pepper.
7. Bring to a boil, then reduce heat to low and simmer for 2 hours.
8. Serve hot and enjoy!
Notes:
Feel free to add other root vegetables like parsnips or turnips for extra flavor.
