Ingredients:  

Main Ingredients

  • 2 lbs Lamb shoulder, cut into chunks
  • 4 Carrots, peeled and chopped
  • 4 Potatoes, peeled and chopped
  • 1 Large onion, chopped
  • 3 cups Beef broth
  • 2 tbsp Tomato paste
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a Dutch oven over medium-high heat.
  • 2. Add the lamb chunks and brown on all sides.
  • 3. Remove the lamb and set aside.
  • 4. Add the onion to the Dutch oven and cook until softened.
  • 5. Stir in the tomato paste and cook for another minute.
  • 6. Return the lamb to the pot and add the carrots, potatoes, beef broth, salt, and pepper.
  • 7. Bring to a boil, then reduce heat to low and simmer for 2 hours.
  • 8. Serve hot and enjoy!

Notes:

Feel free to add other root vegetables like parsnips or turnips for extra flavor.
