Ingredients:  

Main Ingredients

  • 2 lbs Pork shoulder cut into chunks
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 4 cups Chicken broth
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 2 tbsp Tomato paste
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add pork shoulder chunks and brown on all sides.
  • 3. Remove pork and set aside. In the same pot, add onions and garlic, sauté until softened.
  • 4. Stir in tomato paste, thyme, and rosemary. Cook for another minute.
  • 5. Return pork to the pot. Add carrots, potatoes, chicken broth, salt, and pepper.
  • 6. Bring to a boil, then reduce heat to low. Cover and simmer for 2.5 to 3 hours, until pork is tender.
  • 7. Serve hot, garnished with fresh herbs if desired.

Notes:

This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
