Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add pork shoulder chunks and brown on all sides.
3. Remove pork and set aside. In the same pot, add onions and garlic, sauté until softened.
4. Stir in tomato paste, thyme, and rosemary. Cook for another minute.
5. Return pork to the pot. Add carrots, potatoes, chicken broth, salt, and pepper.
6. Bring to a boil, then reduce heat to low. Cover and simmer for 2.5 to 3 hours, until pork is tender.
7. Serve hot, garnished with fresh herbs if desired.
Notes:
This stew is even better the next day. Store leftovers in the fridge for up to 3 days.
