Ingredients:  

Main Ingredients

  • 1 kg Chicken thighs boneless, skinless
  • 2 tbsp Jerk seasoning
  • 1 cup Chicken broth
  • 1 can Coconut milk
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 Bell pepper chopped
  • 1 tsp Thyme dried
  • 1 tsp Salt
  • 1 tsp Black pepper

Instructions: 

  • 1. Season chicken with jerk seasoning.
  • 2. Heat oil in a large pot over medium heat. Add chicken and brown on all sides.
  • 3. Add onion, garlic, and bell pepper. Cook until softened.
  • 4. Pour in chicken broth and coconut milk. Stir in thyme, salt, and pepper.
  • 5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • 6. Serve hot with rice or bread.

Notes:

Adjust the jerk seasoning to your taste.
