Instructions:
1. Season chicken with jerk seasoning.
2. Heat oil in a large pot over medium heat. Add chicken and brown on all sides.
3. Add onion, garlic, and bell pepper. Cook until softened.
4. Pour in chicken broth and coconut milk. Stir in thyme, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 30 minutes.
6. Serve hot with rice or bread.

Adjust the jerk seasoning to your taste.
