Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 2 Onions, chopped
  • 4 cloves Garlic, minced
  • 2 cups Beef broth
  • 1 cup Tomato sauce
  • 2 cups Carrots, sliced
  • 2 cups Potatoes, diced
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Paprika
  • 1/2 tsp Cumin
  • 1 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef cubes and brown on all sides. Remove and set aside.
  • 3. In the same pot, add the onions and garlic. Sauté until softened.
  • 4. Return the beef to the pot. Add the beef broth, tomato sauce, salt, pepper, paprika, and cumin. Stir well.
  • 5. Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 hours.
  • 6. Add the carrots and potatoes. Cook for another 30 minutes, or until vegetables are tender.
  • 7. Adjust seasoning if needed. Serve hot.

Notes:

For a thicker stew, you can mash some of the potatoes and carrots.
