Ingredients:  

Main Ingredients

  • 1 lb white fish fillets cut into chunks
  • 1 lb shrimp peeled and deveined
  • 1 cup fish stock
  • 1 cup coconut milk
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tbsp aji amarillo paste
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp cilantro chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and aji amarillo paste, cook for another 2 minutes.
  • Pour in the fish stock and coconut milk, bring to a simmer.
  • Add the fish chunks and shrimp, cook until the seafood is cooked through, about 10 minutes.
  • Season with salt and pepper to taste.
  • Garnish with chopped cilantro before serving.

Notes:

Serve with crusty bread or over rice for a complete meal.
