Ingredients:  

Main Ingredients

  • 2 lbs Beef stew meat cut into chunks
  • 2 tbsp Olive oil
  • 1 large Onion chopped
  • 1 large Green bell pepper chopped
  • 3 cloves Garlic minced
  • 2 cups Tomato sauce
  • 2 cups Beef broth
  • 2 large Potatoes peeled and cubed
  • 1 tsp Ground cumin
  • 1 tsp Dried oregano
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  • Add onion, bell pepper, and garlic. Cook until vegetables are tender.
  • Stir in tomato sauce, beef broth, cumin, oregano, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 1 hour.
  • Add potatoes and continue to simmer for another 30 minutes, or until potatoes are tender.
  • Serve hot with rice or bread.

Notes:

This stew is even better the next day, so consider making it ahead of time.
