Ingredients:  

Main Ingredients

  • 1 whole Rotisserie Chicken shredded
  • 2 cups Chicken Broth
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Potatoes diced
  • 1 tsp Salt to taste
  • 0.5 tsp Black Pepper to taste
  • 1 tsp Dried Thyme
  • 1 tsp Dried Rosemary

Instructions: 

  • 1. In a large pot, heat some oil over medium heat.
  • 2. Add the chopped onions, carrots, and celery. Cook until softened.
  • 3. Add the minced garlic and cook for another minute.
  • 4. Pour in the chicken broth and bring to a boil.
  • 5. Add the diced potatoes, shredded rotisserie chicken, salt, pepper, thyme, and rosemary.
  • 6. Reduce heat and let it simmer for about 30 minutes, or until the potatoes are tender.
  • 7. Adjust seasoning if necessary and serve hot.

Notes:

This stew is perfect for using up leftover rotisserie chicken. Feel free to add other vegetables you have on hand.
