Instructions:
1. In a large pot, heat some oil over medium heat.
2. Add the chopped onions, carrots, and celery. Cook until softened.
3. Add the minced garlic and cook for another minute.
4. Pour in the chicken broth and bring to a boil.
5. Add the diced potatoes, shredded rotisserie chicken, salt, pepper, thyme, and rosemary.
6. Reduce heat and let it simmer for about 30 minutes, or until the potatoes are tender.
7. Adjust seasoning if necessary and serve hot.
Notes:
This stew is perfect for using up leftover rotisserie chicken. Feel free to add other vegetables you have on hand.
