Ingredients:  

Main Ingredients

  • 2 lbs Wild Boar cut into chunks
  • 2 tbsp Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 4 cups Beef Broth
  • 1 cup Red Wine
  • 2 tbsp Tomato Paste
  • 2 tsp Thyme dried
  • 2 tsp Rosemary dried
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the wild boar chunks and brown on all sides. Remove and set aside.
  • 3. In the same pot, add the chopped onion and minced garlic. Cook until softened.
  • 4. Add the sliced carrots and diced potatoes. Cook for a few minutes.
  • 5. Return the wild boar to the pot. Pour in the beef broth and red wine.
  • 6. Stir in the tomato paste, thyme, and rosemary. Season with salt and black pepper to taste.
  • 7. Bring to a boil, then reduce heat and simmer for about 2 hours, or until the meat is tender.
  • 8. Serve hot and enjoy!

Notes:

For a richer flavor, marinate the wild boar in red wine and herbs overnight.
