Instructions:
1. Heat the oil in a large pot over medium heat.
2. Add the beef and cook until browned on all sides.
3. Add the onion and garlic, and cook until softened.
4. Pour in the beef broth, and bring to a boil.
5. Add the carrots, potatoes, salt, and pepper.
6. Reduce heat to low, cover, and simmer for 2 hours.
7. Serve hot and enjoy!
Notes:
This stew tastes even better the next day.
