Instructions:
Heat olive oil in a Dutch oven over medium heat.
Brown the beef stew meat in batches, then set aside.
In the same pot, add onions, garlic, carrots, and celery. Cook until softened.
Add mushrooms and cook for another 5 minutes.
Stir in tomato paste, thyme, and rosemary.
Return the beef to the pot and add beef broth. Bring to a boil.
Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.
Season with salt and black pepper to taste before serving.
Notes:
Serve with crusty bread for a complete meal.
