Ingredients:  

Main Ingredients

  • 1 lb Beef Stew Meat cut into chunks
  • 2 cups Mushrooms sliced
  • 1 cup Carrots chopped
  • 1 cup Celery chopped
  • 1 cup Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 tbsp Tomato Paste
  • 1 tsp Thyme dried
  • 1 tsp Rosemary dried
  • 2 tbsp Olive Oil
  • to taste Salt
  • to taste Black Pepper

Instructions: 

  • Heat olive oil in a Dutch oven over medium heat.
  • Brown the beef stew meat in batches, then set aside.
  • In the same pot, add onions, garlic, carrots, and celery. Cook until softened.
  • Add mushrooms and cook for another 5 minutes.
  • Stir in tomato paste, thyme, and rosemary.
  • Return the beef to the pot and add beef broth. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 2 hours or until beef is tender.
  • Season with salt and black pepper to taste before serving.

Notes:

Serve with crusty bread for a complete meal.
