Instructions:
Heat a large pot over medium heat. Add a bit of oil.
Add chicken and cook until browned.
Add onion, carrots, celery, and garlic. Cook until veggies are soft.
Stir in rice, chicken broth, salt, pepper, thyme, and bay leaf.
Bring to a boil, then reduce heat and simmer for 30 minutes, or until rice is cooked.
Remove bay leaf before serving.
