Ingredients:  

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 cup rice
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp thyme
  • 1 bay leaf

Instructions: 

  • Heat a large pot over medium heat. Add a bit of oil.
  • Add chicken and cook until browned.
  • Add onion, carrots, celery, and garlic. Cook until veggies are soft.
  • Stir in rice, chicken broth, salt, pepper, thyme, and bay leaf.
  • Bring to a boil, then reduce heat and simmer for 30 minutes, or until rice is cooked.
  • Remove bay leaf before serving.
