Ingredients:  

Main Ingredients

  • 2 lbs beef stew meat cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 2 tbsp vegetable oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups beef broth
  • 1 cup red wine optional
  • 3 large carrots sliced
  • 4 large potatoes peeled and cubed
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions: 

  • Coat beef with flour. Heat oil in a large pot over medium heat. Brown beef in batches.
  • Add onion and garlic, cook until softened.
  • Stir in beef broth, wine, tomato paste, thyme, and rosemary. Bring to a boil.
  • Reduce heat, cover, and simmer for 1.5 hours.
  • Add carrots and potatoes. Simmer for another 30 minutes until vegetables are tender.
  • Season with salt and pepper.

Notes:

Serve hot with crusty bread.
