Ingredients:

red bell pepper, chopped

sweet potato, peeled and cubed

diced tomatoes

vegetable broth

peanut butter

kale, chopped

Instructions:
1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
2. Stir in the garlic, red bell pepper, and sweet potato. Cook for another 5 minutes.
3. Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
4. Stir in the peanut butter, cumin, and cayenne pepper. Simmer for another 10 minutes.
5. Add the chopped kale and cook until wilted, about 5 minutes. Season with salt and pepper to taste.
Notes:
This stew pairs well with rice or flatbread.
