Ingredients:  

Main Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 sweet potato, peeled and cubed
  • 1 cup diced tomatoes
  • 4 cups vegetable broth
  • 1/2 cup peanut butter
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1 cup kale, chopped
  • to taste salt and pepper

Instructions: 

  • 1. Heat the oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.
  • 2. Stir in the garlic, red bell pepper, and sweet potato. Cook for another 5 minutes.
  • 3. Add the diced tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • 4. Stir in the peanut butter, cumin, and cayenne pepper. Simmer for another 10 minutes.
  • 5. Add the chopped kale and cook until wilted, about 5 minutes. Season with salt and pepper to taste.

Notes:

This stew pairs well with rice or flatbread.
