Ingredients:  

Main Ingredients

  • 2 lbs stew meat cut into bite-sized pieces
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 can diced tomatoes 14.5 oz
  • 1 can tomato sauce 8 oz
  • 1 can kidney beans 15 oz, drained and rinsed
  • 1 can black beans 15 oz, drained and rinsed
  • 2 cups beef broth
  • to taste salt and pepper

Instructions: 

  • 1. Heat a large pot over medium-high heat. Add the stew meat and cook until browned on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Stir in the chili powder, cumin, and oregano. Cook for another minute until fragrant.
  • 4. Add the diced tomatoes, tomato sauce, kidney beans, black beans, and beef broth. Stir to combine.
  • 5. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1.5 to 2 hours, or until the meat is tender.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to adjust the spices to your taste. This chili is great served with cornbread or over rice.
