Instructions:
1. Heat the pot over medium heat and add a bit of oil.
2. Add the chicken cubes and cook until browned.
3. Add the onions and garlic, sauté until fragrant.
4. Pour in the chicken broth and bring to a boil.
5. Add the carrots, potatoes, thyme, and rosemary. Simmer for 30 minutes.
6. Season with salt and pepper to taste. Serve hot.
