Ingredients:  

Main Ingredients

  • 2 lbs Lamb shoulder, cut into chunks
  • 4 Large potatoes, peeled and diced
  • 2 Large carrots, peeled and sliced
  • 1 Large onion, chopped
  • 4 cups Beef or lamb broth
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 2 tbsp Chopped fresh parsley

Instructions: 

  • 1. Heat a large pot over medium heat and add the lamb chunks. Brown the meat on all sides.
  • 2. Add the chopped onion to the pot and cook until softened.
  • 3. Add the potatoes, carrots, and broth to the pot. Bring to a boil.
  • 4. Reduce heat to low, cover, and simmer for about 2 hours, or until the meat and vegetables are tender.
  • 5. Season with salt and pepper to taste. Stir in chopped parsley before serving.

Notes:

This traditional Irish stew is perfect for a cozy dinner. Serve with crusty bread.
