Lamb shoulder, cut into chunks

Large potatoes, peeled and diced

Large carrots, peeled and sliced

Large onion, chopped

Beef or lamb broth

Chopped fresh parsley
Instructions:
1. Heat a large pot over medium heat and add the lamb chunks. Brown the meat on all sides.
2. Add the chopped onion to the pot and cook until softened.
3. Add the potatoes, carrots, and broth to the pot. Bring to a boil.
4. Reduce heat to low, cover, and simmer for about 2 hours, or until the meat and vegetables are tender.
5. Season with salt and pepper to taste. Stir in chopped parsley before serving.
Notes:
This traditional Irish stew is perfect for a cozy dinner. Serve with crusty bread.
