Ingredients:  

Main Ingredients

  • 1 lb chicken breast boneless, skinless
  • 1 lb pork shoulder boneless
  • 1 cup barbecue sauce
  • 1 cup ketchup
  • 2 cups chicken broth
  • 1 cup corn kernels frozen or fresh
  • 1 cup lima beans frozen or fresh
  • 1 cup diced tomatoes canned
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • 1. In a large pot, cook the chicken and pork over medium heat until browned.
  • 2. Add the chopped onion and minced garlic, cook until softened.
  • 3. Stir in the barbecue sauce, ketchup, chicken broth, Worcestershire sauce, salt, and pepper.
  • 4. Add the corn, lima beans, and diced tomatoes. Bring to a boil.
  • 5. Reduce heat and simmer for about 1 hour, stirring occasionally.
  • 6. Shred the meat with two forks and mix well. Serve hot.

Notes:

This stew tastes even better the next day. Store leftovers in the fridge.
