Ingredients:  

Main Ingredients

  • 1 lb chicken thighs, boneless, skinless, cut into bite-sized pieces
  • 1 lb andouille sausage, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups chicken broth
  • 1 cup okra, sliced
  • 2 tbsp flour
  • 2 tbsp oil
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp oregano
  • 1 tsp cayenne pepper
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions: 

  • Set the Instant Pot to sauté mode and heat oil. Add chicken and sausage, cook until browned. Remove and set aside.
  • Add onion, bell pepper, celery, and garlic to the pot. Sauté until softened.
  • Stir in flour, paprika, thyme, oregano, and cayenne pepper. Cook for 1-2 minutes.
  • Add diced tomatoes, chicken broth, okra, and the cooked chicken and sausage back to the pot. Season with salt and pepper.
  • Close the Instant Pot lid, set to high pressure for 10 minutes. Quick release the pressure.
  • Serve the gumbo over cooked rice.
