Ingredients:  

Main Ingredients

  • 3 lb chuck roast
  • 1 onion, chopped
  • 4 carrots, peeled and cut into chunks
  • 4 potatoes, peeled and cut into chunks
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions: 

  • Season the chuck roast with salt and pepper.
  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Sear the chuck roast on all sides until browned. Remove and set aside.
  • Add onions and garlic to the pot, sauté until fragrant.
  • Stir in tomato paste and thyme, cook for 1 minute.
  • Pour in beef broth and deglaze the pot.
  • Add back the chuck roast, carrots, and potatoes.
  • Close the lid, set to high pressure for 60 minutes.
  • Quick release the pressure and carefully open the lid.
  • Serve the pot roast with vegetables and enjoy!

Notes:

This recipe is perfect for a cozy family dinner. Feel free to add other vegetables like celery or parsnips for extra flavor.
