chuck roast

onion, chopped

carrots, peeled and cut into chunks

potatoes, peeled and cut into chunks

garlic, minced

beef broth

tomato paste

dried thyme
Salt and pepper to taste

olive oil
Instructions:
Season the chuck roast with salt and pepper.
Set the Instant Pot to sauté mode and heat the olive oil.
Sear the chuck roast on all sides until browned. Remove and set aside.
Add onions and garlic to the pot, sauté until fragrant.
Stir in tomato paste and thyme, cook for 1 minute.
Pour in beef broth and deglaze the pot.
Add back the chuck roast, carrots, and potatoes.
Close the lid, set to high pressure for 60 minutes.
Quick release the pressure and carefully open the lid.
Serve the pot roast with vegetables and enjoy!
Notes:
This recipe is perfect for a cozy family dinner. Feel free to add other vegetables like celery or parsnips for extra flavor.
