  • 1 pound dried black beans rinsed and picked over
  • 1 onion chopped
  • 1 green bell pepper chopped
  • 4 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 bay leaf
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Optional toppings chopped cilantro, diced avocado, lime wedges

Instructions: 

  • Place the black beans, onion, bell pepper, garlic, cumin, oregano, bay leaf, and vegetable broth in the Instant Pot.
  • Close the lid and set the valve to sealing. Cook on high pressure for 25 minutes.
  • Allow the pressure to release naturally for 10 minutes, then do a quick release.
  • Season with salt and pepper to taste.
  • Serve the black beans hot with optional toppings like chopped cilantro, diced avocado, and lime wedges.

Notes:

You can serve these beans as a side dish or over rice for a complete meal.
