Instructions:
Place the black beans, onion, bell pepper, garlic, cumin, oregano, bay leaf, and vegetable broth in the Instant Pot.
Close the lid and set the valve to sealing. Cook on high pressure for 25 minutes.
Allow the pressure to release naturally for 10 minutes, then do a quick release.
Season with salt and pepper to taste.
Serve the black beans hot with optional toppings like chopped cilantro, diced avocado, and lime wedges.
